The entire winemaking process is superviswed by Catherine Cohen. Each plot is vinified separately.

To begin with, a selective sorting of the grapes takes place. Then we carry out the de-stemming and filml the vats with whole grapes without them being squashed or crushed. Depending on the vintage, the selection and the ripeness of the grapes, some stalks may be added to the vats during this process.

Cold pre-fermentation is almost done systematically. We aim for the alcoholic fermentation to start gently and naturally since no yeast is used. Only indigenous and natural yeasts are sufficient to allow the fermentation to begin smoothly. No oenological products of any kind are used during the winemaking process. We pump over the wine using a peristaltic pump, punching down the cap insuring the perfect temperature.
