Our entire wine production is aged in 100% light toasted French oak barrels from the Jupille, Tronçais and Centre-France forests.
The ageing period varies between the wines and the vintage, from 6 months (Blanc du Château Vieux Taillefer) to 24 months (Château Vieux Taillefer).
There is little assistance needed during the during the maturing process, racking is hardly ever done. Once the maturing process is over, we blend the wines in vinification vats after having thoroughly tasted each barrel over and over again.
The wines stay in vats for several months. We do not carry out any form of filtration, we let the lees settle delicately at the bottom of the vats.
